After years dominated by mass-produced loaves prioritising speed and low cost, consumers now demand transparency on origins, production methods and nutritional value. This has revived traditional bakeries, long fermentations and carefully chosen ingredients.

Vicenç Giménez, a baker with nearly 50 years of experience and founder of Can Vicenç, attributes the trend to a desire for healthier eating. "Artisan bread and industrial bread are not comparable," he said, noting that many traditional ovens faced extinction or reinvented themselves by focusing on top-quality loaves with precise processes and premium flours.

Experts emphasise fermentation as a core differentiator. Dietitian-nutritionist Katia Durich explained that sourdough's slower, more complex process alters texture, aroma and certain components. However, health benefits also hinge on flour type, salt levels and processing degree. Industrial breads often include more preservatives, making them less healthy.

Chemist and educator Núria Robert, who runs home-baking workshops, pointed out that proper sourdough fermentations last around 16 hours, with starter cultures taking up to five days to develop from scratch. "It's about understanding the process and fitting it into daily life, not constant monitoring," she said.

Physiologically, sourdough's lactic acid bacteria can enhance nutrient absorption, improve digestive tolerance for some and lower glycemic response—useful for diabetes or prediabetes management. Effects vary, though: white-flour or short-fermentation versions offer little edge over standard bread. Robert added, "If well-made with good ingredients, it suits the stomach and health better." Giménez highlighted diverse flour options, from 45 cents to two euros per kilo, allowing personalised choices, though those with celiac disease must avoid gluten entirely.

Durich cautioned against marketing hype, where "sourdough" labels mask minimal use or rushed processes. Shoppers should seek wholegrain flours, short ingredient lists, low salt, dense textures and at least 12-hour fermentations. As part of a balanced diet, such bread provides carbohydrates effectively—ideally dense, not overly airy—with portions tailored to activity levels and health goals.
