Les Pardines 1819, located at the entrance to the Grandvalira ski area in Encamp, is part of the boutique hotel Les Pardines 1819 Mountain Suites & SPA and operates in a restored borda whose owners maintain agricultural and livestock activity. The kitchen is led by chef Óscar Villalba, a former student of Oriol Rovira, and the restaurant defines its offer as market-driven, with Pyrenean influences and a focus on local products. Co-owner Josep Maria Puy highlighted the team’s effort and thanked customers for their support.

The inclusion of Les Pardines 1819 brings renewed attention to Andorra’s gastronomic scene. Rodrigo Martínez, chef at Beç—another establishment retained on the Michelin list—said the recommendations are a step toward earning a Michelin star and praised the sustained efforts of chefs, restaurateurs and business owners in the sector.
