The inaugural Joves Talents de Gastronomia de Muntanya competition has concluded at Lycée Comte de Foix in Andorra, with 14 young hospitality students reaching the final across kitchen and dining room categories.
In the kitchen final, nine participants aged 16 to 22 prepared a free-choice aperitif followed by a reinterpretation of the traditional Catalan fricandó, using Andorran-style ingredients like beef and mushrooms. They had three hours to complete both dishes. Jury member Pep Moreno, manager of the Michelin-starred Deliranto in Salou, described the aperitifs as "very correct but generally technically improvable," stressing that the main ingredient must take center stage. "The sauce cannot have more flavor than the product," he said. For the fricandós, judges noted issues like overly liquid sauces, excess flour, or lack of homogeneity in some entries, though results were viewed positively given participants' limited familiarity with the kitchen. Àuria Espel took first place, followed by Clàudia Font in second; Júlia Ivars led early with the top aperitif but faltered when her sofregit burned.
The dining room final featured five candidates performing five tasks: table service, wine service, perfect beer pouring, cocktail preparation, and making espresso and cappuccino.
Finalists hailed from institutions including Joviat de Manresa, Institut de Gastronomia de Barcelona, Vedruna Pro in Barcelona, Institut Hug Roger III de Lleida, Lycée de Perpinyà, and Lycée Comte de Foix. The kitchen jury comprised Carles Flinch of Can Manel, Filipe Peredo of Grans Magatzems Pyrénées, Rafael Muria of 4 Molins in Cornudella de Montsant, and Moreno.
Competition director Xavier Romeu highlighted its role in promoting high-mountain cuisine and building a talent pool amid restaurateurs' concerns over qualified staff shortages. Chef Flinch added that such events help young competitors feel valued, turning setbacks into learning opportunities to foster passion for the trade.
The event, co-initiated by Moreno and Lycée instructor Hugues Lemarignier, originally drew 24 students from Andorra, Catalonia, and France. It emphasizes Pyrenean culinary identity and addresses generational gaps in manual professions, with Moreno noting shared mountain cooking roots across borders despite ingredient or naming variations. He cautioned that technique must enhance flavor, not overshadow it, and stressed working for clients over awards.
